Callaloo + Chow pop-up, a collaboration between Fu’s Repair Shop chef Winnie Chen and Cafe Caribbean’s Nadine Lewis and Pat Ross, happens February 19-23. The Trini-Chinese pop up begins with a party on Wednesday, February 19, at Fu’s (10524 Jasper Avenue) with a five-course set menu showcasing the rich cultural blend of Guangdong (Chinese) and Caribbean food, traditions and music (soca, dancehall and calypso) from DJ Diamond and a Lion Dance performance from the Yuet Wen Cultural Association. The collaborative dinner is both a delicious feast and a journey through history, exploring how Chinese indentured workers and African slaves used creativity, resilience and local ingredients to forge new culinary traditions. The dishes at the dinner and throughout the week offer guests a delicious intro to the diversity and heritage, shaped by migration, adaptation and innovation, that defines Trini-Chinese cuisine.
